Discover the history & know-how of cacao, with a traditional chocolate tasting

During this workshop of around an hour, Mikael will welcome you into his family garden, to discover the cultivation and traditions surrounding cacao. You will learn the ancestral techniques of planting, the secrets of the harvest and the subtleties of processing cacao.

  1. Step 1 : Arrival and welcome

    Visitors are warmly welcomed and guided among the various fruit trees, spices and cacao trees, where they learn about the different stages of their growth.

  2. Step 2 : Discovering cacao

    Visitors watch the pod being opened and have the chance to taste the mucilage around the beans, discovering the first stage of processing cacao.

  3. Step 3 : Discovering dried beans and hands-on roasting

    The dried beans are presented to visitors, followed by a demonstration of roasting them. A further tasting is offered, to discover the aromas that roasting brings out.

  4. Step 4 : Grinding the beans and making a cacao stick

    Visitors watch the roasted cacao beans being ground and take part in quickly making a cacao stick — a hands-on step that draws them further into how it is made.

  5. Step 5 : Making and tasting traditional hot chocolate

    Visitors are invited to make and taste a delicious traditional hot chocolate from the cacao stick, a sensory experience rich in flavour. A friendly moment of conversation is held around the hot chocolate, and a presentation and sale of derived products and various spices is also offered.
